S'Mao Barbecue was born out of Chef Mao's love for honest-to-god, smoky, delicious barbecue after his time in Austin, Texas, and North Carolina. S'Mao is an abbreviation of 'Smoky Mao' and speaks of his philosophy and approach to food - good food brings people together and makes them smile (S'Mao).

S'Mao Barbecue adopts the time-honoured Texas tradition of low and slow smoking techniques with an honest approach. Every prime cut of meat is prepared the old-fashioned way - lightly seasoned and meticulously smoked for 10 - 14 hours with hardwood/oak/hickory to let the natural flavours of the meat shine.

The result is tender, succulent meats, rich in smokiness and packing a serious depth of flavour.
